THAI TURKEY BUNDLES  

1 1/2 lbs ground turkey
1 beaten egg
1/2 cup coarsely chpd water chestnuts
1/3 c fine dry bread crumbs (from low-carb bread)
1 T soy sauce
1 T lemon juice
1 pkg Equal
1/4 t salt
dash EA. red pepper, ginger
12 lettuce leaves
recipe "Thai Dipping Sauce"

Combine all ingredients except lettuce and mix well. Shape into twelve 4x 1/1/2 x 3/4" loves. Brown in frying pan. Wrap each loaf in a lettuce leaf and serve with dipping sauce. (12 bundles, serves 6. 3.2 c ea w/o sauce; 4.3 c ea with sauce.)

HAMBURG GRAVY AND "MASHED POTATOES"  

1 med onion
2 T oil
2 lb ground beef
1 t garlic powder
salt & pepper
1/4 c sour cream
3 oz cm cheese
3 c water
1 med cauliflower
2 T butter

Cut up cauliflower and boil til very tender. Saute onion in oil in pan. Add meat and brown. Add spices and water and cook til water boils. Turn down heat. Add sour cream and cream cheese and simmer 10 min til gravy thickens. (DO NOT BOIL). Mash cauliflower with butter, salt & pepper. Serve hamburger "gravy" over "potatoes." (34 total carbs - ? servings).

SHEPHERD'S PIE  

3/4 lb ground beef, cooked
1 c mushrooms
2 cloves garlic
s&p
3 T mayo
2 oz cheddar
mashed cauliflower

Preheat oven 350. Spoon cauliflower into 9x13 pan. Saute beef with mushrooms and garlic. Stir in mayo, s&p. Spoon over cauliflower. Sprinkle cheese over and bake 20 min. (Serves 4; 1.5 carbs WITHOUT cauliflower)

TACO SALAD  

12 oz gr beef
2 c lettuce
1/2 pkg taco seas mix
salt, pepper, cumin, Old Bay
4 oz shr cheddar
2 T salsa
1 T sour cream

Brown beef and stir in spices. Spoon meat over lettuce, sprinkle with cheese. Spoon salsa and sour cream on top. (Serves 2, 6.9 carbs ea.)

CHEESEBURGER QUICHE  

1/2 lb ground beef
1/3 c chpd onion
2 eggs
1/2 c mayo
1/4 c cream
6 oz shr cheddar
salt & pepper
1/2 c mushrooms

 Brown ground beef and onion. Drain. Add mushrooms and cook through. Beat eggs and mix in mayo, cream, cheese and seasoning. Put beef mixture in sprayed pie pan. Pour custard over. Bake at 350 for 45 min. Let stand 10 min before cutting. (Serves 3, 4.9 carbs each)

LASAGNA WITHOUT NOODLES  

8 oz ricotta cheese
10 meatballs, cut up
1/4 c tomato sauce
2 T parmesan
shredded mozzarella
spaghetti squash (optional)


Fold meat into ricotta and stir in tomato sauce. (may need to use more than 1/4 cup depending on your taste). Sprinkle with parmesan, top with mozzarella. Heat in microwave until cheese melts. (Serves 2)

(I had leftover cooked spaghetti squash so I stirred it in before heating. I also put the casserole under the broiler for just a few minutes 'cause I like my cheese kind of brown and bubbly. This was real easy and tasted great. - watch the carbs in the squash and tomato sauce, tho.)

ITALIAN CASSEROLE W/CRUST  

1 lb ground beef
1/4 c chpd onion
1 c tomato sauce
6 oz shredded mozzarella
1/2 c sour cream
1/4 c Atkins baking mix
1/4 c soy protein isolate
2 eggs
2 t melted butter
1/3 c parmesan

Heat oven 375. Brown ground beef and onion. Drain. Stir in sauce. In bowl, mix mozzarella and sour cream. In another bowl, mix baking mix, isolate and eggs. Pour hot meat mixture into 2 qt baking dish. Spoon cheese mixture over. Drop dough by tablespoons, then take spatula and smooth over top. Mix melted butter and parm and spread over dough. Bake 18-25 min til golden brown and topping is done. (Serves 3, T=32.7. Ea: 10.9 c, 69 g fat, 770 cal)

MEATBALLS IN SOUR CREAM SAUCE  

1 lb ground beef
1/2 c bread crumbs (low-carb - 3 slices of low carb bread substitute)
1/4 c tomato sauce
2 T cream
1 t worcestershire
salt, pepper, garlic powder
Sour Cream Sauce

Preheat oven 450. Mix all ingredients, make small balls and bake 10 min. Turn and bake 5-10 min more. Simmer 10 min in sauce. (Can use tomato sauce as well. If using sour cream sauce, simmer meatballs in just the gravy. Stir in sour cream just before serving - sour cream should not boil). (20 meatballs - ea: .4 carb, 4.6 fat, 62 cal)

ZUCCHINI-BEEF BAKE  

1 lb ground beef
1 small chpd onion (14)
2 c tomato sauce (24)
2 cups shredded cheddar (or other) (10)
3 med. Zucchini, sliced (8)
1 cup sliced mushrooms (3)
2 T oil
1/2 t ea: oregano, basil, salt

Saute zucchini, onion and mushrooms in oil til tender. Brown ground beef in pan and add tomato sauce with seasonings. Mix beef with vegetables and put in baking dish. Top with cheese. Bake, uncovered, at 350 for 30 min. (Total 59 carbs. Serves 6 @ 9.8 carbs ea.)

This is fairly high in carbs, but includes your vegetable.

NOODLELESS LASAGNA  

1/2 lb ground beef
1/2 lb sausage (link or bulk)
1 clove garlic
1/4 c chpd onion (3.7)
1/2 c tomato sauce (6)
16 oz ricotta (24)
5 oz shredded mozzarella (5)
2 eggs (1.2)
1/2 c fresh spinach (3.3)
salt and pepper

Brown the meat, add garlic and onion and saute few minutes. Mix in tomato sauce. In separate bowl, mix ricotta, eggs, salt and pepper and 4 oz mozzarella. Spray deep dish with Pam. Layer meat, ricotta mix and fresh spinach. Top with last ounce of mozzarella. Bake at 350 for 45 min. (Total 42.4 carbs. Serves 4 LARGE servings @ 10.6 carbs, or 6 reasonable ones @ 7.0.

CHEESY HAMBURGER HELPER (Dottie)  

1 lb ground beef
onion powder
2 cloves minced garlic (1.8)
3/4 jar Ragu Cheese Creations Double Cheddar (10.5)
8 oz (half bag) of shredded cabbage (18)
1/4-1/2 cup water

Brown ground beef with garlic and onion powder. Add cabbage and water and stir well. Cover, reduce heat, and let simmer 10 minutes. Raise heat, pour in sauce and stir to mix. Salt and pepper to taste. (30 carbs - 3 servings @ 10 ea.)

This is fairly high in carbs, but includes your vegetable.

BEEF BURRITOS (Cin)  

1/2 lb ground beef
1 t taco seasoning (1)
1/2 cup ricotta (6)
1/4 c sour cream (2)
1 t powdered chicken broth
1 cup (8 oz) shredded taco cheese (4.8)
1/2 cup salsa (.9)
1 cup black soy beans (2 net)
3 Dottie's Crepes (2.1)

Preheat oven to 350. Brown the meat and add the taco seasoning. Mix sour cream, ricotta, powdered broth, and 1/4 cup salsa into beef. Drain beans well and add to mixture. Spoon some beef mixture onto crepes, sprinkle with cheese and roll up. Place in baking dish. Sprinkle with a little cheese. Bake 30 minutes until heated. Top with 1 T salsa and sprinkling of cheese. Makes 4 crepes - serves 3? (I had one, DH had 2 and one leftover).(13 carb, 5 fiber, 675 Calories, 55g Fat, 33g Protein

SMOKY MEATLOAF  

1 lb ground beef
1 bag spicy bbq pork rinds - crushed
2 eggs (1.2)
3 T minced dried onion (2)
1 T Worcestershire sauce (3)
1 t liquid smoke

Preheat oven 350. Mix all ingredients along with salt and pepper to taste. Form into a loaf and place in a baking dish. Bake 1 hour. (Total 6.2 - serves 3 @ 2.1 ea.)

HAM LOAF  

1/2 lb ground smoked ham
6 oz ground pork
1 egg (.6)
1/2 c dry bread crumbs (.9)*
2 T brown sugar sub (3)
1 t prepared mustard (.6)
1/2 t soy sauce

Preheat oven to 350. Mix ham, ground pork, eggs and bread crumbs in bowl. Put in loaf pan and bake 45 min - 1 hr. Mix brown sugar, mustard and soy sauce together. Spread over loaf during last 15 min. of baking. Total 5.1 - serves 4 @ 1.3 ea.

(Can use 3 slices of Low Carb Bread Sub. Pulverize in food processor. Or - I didn't have any bread handy, so I used 1/2 cup wheat bran (2 carbs after subtracting for fiber).

BOBOTIE (S. African Lamb Curry)  

2 lbs ground lamb
1/2 cup onion, sliced (7.4)
3 T curry powder (9)
3 T Splenda (4.5)
1 T lemon juice (1.4)
1/2 grated apple (8.2)
3/4 t nutmeg
3/4 cup whipping cream (5)
2 eggs (1.2)
salt & pepper

Preheat oven to 375. Brown lamb in pan and remove. Melt some butter and brown onions. Return lamb to pan and add curry, splenda, s&p. Remove from heat and stir in lemon juice and apple. Pour mixture into casserole dish. Mix eggs, cream and nutmeg and pour on top of mixture. Bake 45 min. (Total 36.7 - serves 4 @ 9.2)

This is really unusual but we loved it. You can use ground beef (it will certainly be cheaper!) but the lamb is more delicate. Could subsitute jicama for the apple which will cut the carbs a little. I halved the recipe, but will use both eggs and all the cream next time for a little more "custard."

TURKEY LOAVES W/"PINEAPPLE" SAUCE

1 lb ground turkey
1/2 cup pork rinds
1/3 cup green onion, chopped
2 tbsp cream
1 egg
1 tbsp worcestershire sauce
1 tsp dry mustard
1/4 tsp garlic powder
salt & pepper

Sauce:
1 cup SF pineapple syrup
1 tsp ginger
1 tsp worcestershire
1 tsp not/Starch
1 tsp parsley

Mix loaf ingredients. Pack into 6 large greased muffin tins. Bake at 350 for 40 minutes. Combine sauce ingredients in pan and heat til thickened. Pour over loaves. Serves 3 @ 3 carbs, 275 cal, 15 fat, 29 protein.

SPAGHETTI SQUASH CREATIVITY (Zoe)

3 cups spaghetti squash
1 beaten egg
1/3 cup parmesan cheese
1 cup ricotta
1 beaten egg
1/2 lb ground beef
1/2 cup onion, chopped
1/4 cup green pepper, chopped
2 cups tomato sauce
garlic powder, oregano, basil, parsley
1/2 cup mozzarella, shredded

Preheat oven to 350. Mix squash, 1 egg and parmesan. Press evenly into 9" pie plate. Mix ricotta and other egg and spread over squash mixture. In skillet, brown ground beef with onion and green pepper. Drain excess fat. Add tomato sauce and spices and simmer for few minutes. Spoon over ricotta mixture in pie plate. Bake approx. 15 min. Sprinkle with mozzarella and make 10 min. more to brown cheese. Remove from oven and let sit 5-10 min before cutting. Serves 6 @ 11 carb, 1 fiber, 322 cal, 23 fat, 18 protein.

Don't get turned off by the list of ingredients! This is really easy. I cooked the spaghetti squash on the weekend and put in the fridge in a container. I always have some browned ground beef in the freezer, so this didn't take much time to assemble. (To cook spaghetti squash, pierce with fork, then put in the microwave for 15 min. Let cool a little, cut in half, scoop out seeds and run fork over the squash - it will separate into spaghetti-type strands).

ITALIAN TURKEY MEATLOAF

1 lb sausage, cooked and diced
1 lb ground turkey
2 eggs
14 oz can diced tomatoes
1/2 cup onion, chopped
1 tbsp parsley
1 cup pork rinds, crushed
1/2 cup parmesan cheese
1/2 cup tomato sauce

Preheat oven to 375. Beat eggs and stir in other ingredients except meats. Mix in meats just til blended. Place meat in 8x8" glass baking pan. Bake 1 hour. Top with tomato sauce and bake 15-30 min more. Let stand 10 min. before serving. Serves 4 @ 9 carb, 2 fiber, 597 Calories, 39g Fat, 42g Protein

SWEET & SOUR PORK (OR LAMB) PATTIES

1 1/2 lbs ground pork (or lamb)
1/2 cup crushed pork rinds
1 tsp red pepper flakes
1 tsp salt
1 egg
1 Tbsp heavy cream
1 tsp parsley
1/4-1/2 cup finely chopped onion
recipe "Sweet & Sour Sauce"

Mix all but sauce ingredients, and shape into 8 - 12 patties. Slowly brown in frying pan until juices run clean. Drain well and serve with sauce. (Serves 4 @ 6.9 carbs ea.)

BEEF, BEAN & CHEESE TOSTADAS

4 slices provolone (3)
3/4 lb ground beef
1/4 cup chopped onion (3.7)
1/2 cup organic black soy beans (5)
1 t chili powder (1.4)
1/2 t garlic powder
1/2 t salt 1/4 t cayenne pepper
1/4 cup diced tomato (2)
1/2 cup cheddar cheese, shredded (1.2)
2 T sour cream (1)

Using parchment paper, microwave each slice of provolone for 1-2 min til brown and crispy. Brown ground beef & onions, drain fat. Add spices and drained beans and heat. On each provolone shell, layer meat mixture, top with tomato, then cheese. Serves 2 @ 9.8 carbs

This is a little high in carbs, but tasted SO good. The provolone shell was a little hard to cut. I might cut them in quarters next time and make "nachos" which can be picked up by hand.

SOUTHWEST CHICKEN BURGERS (www.lhj.com)

1 lb ground chicken
1/2 cup zucchini, shredded
2 T green chiles, chopped
1/2 t ea. cumin & salt
pepper
1/2 cup salsa
2 T green onions, chopped
2 T fresh cilantro, chopped
1 T plain nonfat yogurt

Combine chicken, zucchini, chiles, & spices. Shape into 4-5 patties and fry til no longer pink in center. Combine remaining ingredients in small bowl and serve over patties. Makes 4 @ 4 carbs, 1 fiber, 187 cal, 10 fat, 21 protein

GR. BEEF & CABBAGE CASSEROLE

1 lb ground beef
1/4 cup cauliflower, cooked & shredded
2 tbsp oil
1/2 cup onion, chopped
1 cup cabbage, shredded
14 oz can tomatoes, crushed
1 tbsp lemon juice
2 tbsp Splenda

Brown ground beef and remove from pan. Saute onion and cabbage until soft. Add remaining ingredients, including beef, cover and simmer 30 minutes. Serves 3 @ 8 carbs, 2 fiber, 587 cal, 50 fat, 26 protein.

The easy way to get the flavor of those cabbage rolls without the effort!

BACON CHEESEBURGER

1 lb ground beef
1 egg
4 oz cheddar cheese
4 oz mozzarella cheese
4 slices bacon
garlic powder, salt, pepper

Preheat oven to 350. Cook bacon. Brown beef and drain well. Mix beef, egg, cheddar and spices. Press mixture into small casserole and top with mozzarella. Bake 30-35 min til edges brown. Top with bacon. Serves 2 @ 4.1 carbs.
